德国酥饼 (German Cookies)

相信玩烘焙的人都不会对这酥饼感到陌生, 没错! 它就是之前在网络里爆红了蛮久的德国酥饼.
第一次做也第一次尝试它的味道, 吃过后才知道它到了什么程度,入口即溶用在它身上可真是贴切极了...

 


Ingredient:
Cake flour – 100g
Potato starch – 150g
Butter – 150g
Icing Sugar – 50g
Milk powder – ½ tablespoon

Method:
1) Mix the sifted icing sugar and butter until the sugar is completely dissolved in butter.
2) Add the sifted cake flour, potato starch and milk powder, mixing until well blended to form soft dough.
3) Roll the dough out and cut into shapes.
4) Bake in preheated oven at 160'C for about 20 minutes.


材料:
低筋面粉 – 100g
马铃薯粉 – 150g
牛油 – 150g
糖粉– 50g
奶粉 – ½汤匙

步骤:
1)将过筛的糖粉及牛油搅拌匀允至糖粉完全溶入牛油.
2)加入过筛的低筋面粉,马铃薯粉和奶粉,拌匀成面团.
3)
把面团揉成小粒或压扁,然后做造型.
4)
预热烤箱,160度烤20分钟即可.

棒棒糖蛋糕 (Cake Pop)

拥有了第一次的尝试, 知道了问题所在再加以修正, 终于做出了美美的Cake Pop  ^0^
无可置疑, 小孩看了这些Cake Pop都无法抗拒吧! 至于大人们, 那就要看你对甜食钟爱的程度有多深了




Ingredients:
Chocolate cake – 400g (feel free to bake/use any flavor of the cake)
Compound chocolate – 200g
Shortening – ¾ to 1 tablespoon
Lollipop sticks
Colored candies, chopped almonds or other decorative sprinkles
Styrofoam/cup
(Should be able to get 10-12 cake balls from 400g of cake)

Method:
1) Allow the cake to cool after baked, then put in a large mixing bowl.
2) Melt the compound chocolate, add some shortening to thin out a bit, then continue to stir until completely smooth.
3) Crumble the entire cake and add in 1.5 tablespoons of compound chocolate. The compound chocolate will acts as a glue to hold the cake balls together.
4) Mix the compound chocolate evenly throughout the crumbled cake until the cake mix is moist enough to keep its shape. You can add more compound chocolate if your cake is still dry and difficult for shaping.
5) Use your hand to roll the cake mix into little balls.
6) After completed the step 5, put all the cake balls in the freezer for about 15 minutes. This will make the cake balls more solid and prevent them from falling off the stick when coating with chocolate.
6) Take a lollipop stick and dip into the compound chocolate about 1 inch, then place it gently into the center of the chilled cake ball. (This will act as a glue to keep the cake pop and stick attached)
8) Coat the cake pops in the melted compound chocolate evenly.
9) Then decorate the cake pops with sprinkle the colored candies on top.
10) Lastly, place the cake pops in the Styroform or Cup to harden.


材料:
巧克力蛋糕 – 400g (可选择任何口味)                                       
非調溫巧克力 – 200g
白油 - ¾ to 1汤匙
棒棒糖棒
彩色糖/杏仁碎
(以上份量可做1012棒棒糖蛋糕)

步骤:
1)将烘制好的蛋糕搁置一旁,待冷却.
2)隔水溶解巧克力,添加少许白油将之稍微调薄些许,然后继续搅拌至顺滑.
3)/搓碎蛋糕,加入1.5汤匙溶化后的巧克力酱,拌勻至蛋糕能粘在一起且被塑造出形状.
若蛋糕还是很干,无法塑形,那就可再加多点巧克力酱以增加潮湿度.
4)用手将处理过的蛋糕搓圆变成蛋糕粒.
5)当步骤(4)完成后,将所有的蛋糕粒放入冰箱(冷冻部位),冷冻大约15分钟,取出.
这冷冻的步骤能稳固蛋糕粒,使之在粘巧克力酱时不会那么容易脱落.
6)将棒棒糖棒沾上一点巧克力酱,然后再轻轻地插入冷冻过的蛋糕粒里. (巧克力酱将作为胶水把蛋糕粘在棒枝上)
7)将蛋糕粒轻轻地以旋转方试沾上巧克力酱.
8)然后,洒上装饰用的彩色糖/杏仁碎.
9)最后,将装饰好的棒棒糖蛋糕插在保利龙或杯里,让巧克力硬化即可.

自家招牌豆腐 (Own Signature Beancurd)

用了三种配料来煮我小王子所喜爱的豆腐:D
入味的肉碎冬菇加上脆口的虾米,与这淡淡的豆腐配得天衣无逢.
若我叫它肉碎冬菇虾米豆腐, 名字好像有点长气, 老公说干脆就叫它为自家的照牌豆腐! ^o^


Ingredients:
A) Beancurd – 2 pcs (Cut into thin slices)
B) Dried Mushroom  – 1 to 2 nos (rinsed and soaked in hot water , cut into strips)
C) Minced meat - 2 tablespoons
D) Dried Shrimps - 2 tablespoons (soaked and roughly chopped/pound)
E) Salted Soya Bean - 1 tablespoon
F) Garlic paste

Marinade for minced meat:
A) Light soy source – 2 tablespoons
B) A dash of pepper
C) Corn flour - 1 teaspoon

Seasonings:
A) A dash of Salt to taste
B) A dash of Sugar to taste
C) Dark soy source - 1 to 2 tablespoons
D) Water
E) A little Corn flour (mix with some water to form cornstarch mixture)

Method:
1)  Heat some oil, slightly fried the beancurd, remove and place on a plate.
2)  Sauté the dried shrimps until golden and fragrant. Set aside.
3)  Saute the garlic paste and salted soya bean until fragrant.
4)  Add dried mushrooms and stir fry for a while
5)  Then add in the marinated mince meat, a dash of salt, sugar and dark soy source, stir fry until cooked.
6)  Add some water to simmer for a while, then put some cornstarch mixture. Remove and place on the beancurd (1).
7)  Lastly, put the fried dried shrimps on top before serving.


材料:
A) 豆腐- 2 (切薄片)
B) 冬菇- 1至2 (泡软, 切条状)
C) 肉碎- 2 汤匙 
D) 虾米- 2 汤匙 (剁幼/舂)
E) 豆鼓- 1 汤匙
F) 蒜茸-少许

肉碎腌料:   
A) 生抽- 2 汤匙
B) 胡椒粉- 少许
C) 粟粉- 1 茶匙

调味料:
A) 盐- 适量
B) 糖- 适量
C)老抽- 1至2汤匙
C) 水- 少许
E) 粟粉少许(混和水勾芡用)


步骤:
1)  烧热油,将豆腐片稍微煎一下,盛起铺在碟上.
2)  虾米下锅煎至金黄色,捞起待用.
3)  爆香蒜茸,加入豆鼓炒一会儿
4)  加入冬菇拌炒
5)  然后再放入腌好的肉碎, ,糖及老抽,翻炒至熟
6)  加入水稍微焖一会儿,苟欠后既可乘起铺在之前准备好的豆腐上
7)  最后, 放上煎好的虾米即可
